Worth It!


Workouts are not easy for me, but they're getting easier. Eating balanced isn't easy for me, or at least didn't start out easy for me, and I still have to control myself. But both have totally been worth it!

Cize Day 22 Menu

Can I say Yum? Such tasty food today. I LOVED my sandwich, and my shake, and my salad, and that salad that came straight out my garden, all of it really.

Chocolate Orange Shake-o - red, purple, 1/2 yellow

Quinoa - 1/2 yellow

Spinach and Berry Salad - 1.5 green, purple

Orange Julius Shake-o

You'e seen the Orange Julius restaurants in the mall. Have you tried one of their tasty creations? Well, if you have, and if you liked it, then be sure to try this one! Just as tasty, costs the same (maybe less), and WAY better for you. Plus, since you can make it yourself, you can have it any time you want!

Orange Julius Shake-o

  • 1 scoop vanilla Shakeology
  • 1-1.5 cups almond milk (or water or other milk of choice)
  • 1-2 cups orange juice concentrate (Depending on how sweet and flavorful you want it and also how many calories and grams of sugar you want. I recommend trying it with 1 cup and if you think you need more then add some.
  • 1/4 tsp vanilla (optional)
  • 1-2 cups ice

Steak Fajitas

I found this recipe in Autumn Calabrese's cookbook Fixate. While I liked them there were things about her recipe that weren't my favorite, so I changed it up just a bit.

Steak Fajitas (4 servings)

  • 1.5 tsp EVOO or coconut oil
  • 2 medium red bell peppers (you could use other colors if you prefer), cut into strips
  • 1 medium onion, sliced
  • 2 cloves garlic, finely chopped
  • 1 lb extra-lean beef sirloin, cut into strips
  • 1 tsp. chili powder
  • 1 tsp ground cumin
  • 1 tsp crushed red pepper flakes
  • 1/2 tsp Himalayan or sea salt
  • 8 6-inch corn tortillas, warmed
  • 4 Tbs plain Greek Yogurt (optional)
  • 1/4 cup chopped fresh cilantro (optional)
  • Lime wedges (optional)
  • Fresh Salsa (optional - but definitely recommended!)
  • 1 1/3 cup shredded cheese (optional)


Directions

  1. Heat oil in large nonstick skillet over medium high heat.
  2. Add bell pepper and onion, cook, stirring occasionally, for 5-6 minutes, or until onion is translucent and peppers are tender.
  3. Remove vegetables from the pan and set aside.
  4. Add garlic to the pan, cook, stirring frequently for 1 minute.
  5. Add beef and seasonings; cook, stirring occasionally, for 7-8 minutes, or until meat is no longer pink.
  6. Evenly top each tortilla with beef mixture, vegetables, and whichever toppings you choose to use.

Cize Day 21 Menu

I have an egg scramble almost every morning, but I was super low on veggies so opted to start with my Shakeology instead. It was delicious, of course. I thoroughly enjoyed all the food I ate today, actually. I LOVE grilled cheese sandwiches. I unfortunately burned mine today, but it was still fantastic. And even though those sauteed tomatoes may not look that good, I LOOOOOOOOVE them! One of my favorite toppings for pasta!

Chocolate Banana Nutter - red, purple, 2 tsps
Tuna Salad Over Spinach - red, 1.5 green

Grilled Ham and Cheese - yellow, blue, red, 1 tsp

The Best Pharmacy

I know a lady who lived to be around 100, give or take. She said the secret to her long life was that she never took medications. I kind of agree with that idea. If we make healthy lifestyle choices then medications shouldn't be all that necessary. Not that I never do, I take migraine stuff, but I try to avoid it. ;)

More tasty food that fuels my body with the nutrients it needs! For my mid-morning snack I decided I wanted to have brownie batter dip with apples. I mixed up my dip and went to the fridge to get the apple to slice up and found someone else beat me to it. So, I ate it with my fork. It was still delicious :).

Is It Worth It?

If someone asked you to jump between two buildings that were 30 stories high, and 10 feet apart, would you do it? What if they offered to pay you $100? $1000? $10,000? How about $1,000,000? What about if the building you needed to jump to was on fire and your child was on top of that building, and the only chance she/he had of not burning to death was if you could make that jump, would you do it then?

When we have sufficient motivation then the cost of the obstacle becomes far less important, right?

Cize Day 19 Food

Today my kids and I met my daughter's birth grandma for lunch. She is so good to BOTH my kids, and my husband and me too! We totally lucked out! Anyway, my daughter chose Chick-fil-A. So, I did the best I could and got the Mexican Grilled Chicken Salad. It's actually pretty healthy I think. Another enjoyable day of eating tasty food.

Protein-packed Chocolate Cookie Dough Energy Balls

One morning I wasn't feeling my normal veggie and egg scramble. But I did want something to chew so just starting out with a shake wasn't going to work either. So, I came up with these bad boys. And I'm so glad I did! Super filling, super easy, super tasty, super good for me - basically they were SUPER AWESOME!

Chocolate Cookie Dough Energy Balls
1 scoop chocolate or vegan chocolate Shakeology
1 small banana or 1/2 a large, smashed
2 Tbs peanut butter (the real stuff, that's just peanuts, that you have to stir)
1 1/3 cup quinoa (you can add more if you want them to be less sticky)
Cinnamon (optional)

Mix it all together. You can then roll into balls right away, or if you want a little less gooey mess on your hands you can put the mix in the freezer for an hour or two first. You can also freeze the balls after to make them a little more firm. But firm or not they are fantstic!

Public Service Announcement: Melaleuca for Bug Bites

I don't know about where you live, but here, summer means fire ants and mosquitoes (and flies). I hate getting bites. Mosquitoes love me, and my husband reacts super badly to fire ants. Abby has a scar on her back where she was attacked by ants. I HATE THEM. But I learned recently that if you rub some Melaleuca oil (aka Tee Tree Oil) on them it helps take away the itch and pain significantly!!! So, give it a try.

The Only Bad Workout Is The One That Didn't Happen

This week as I have been doing Cize I have been sticking by this quote. I am so not good at these dances, especially the first couple times I do them. But still, I'm moving the whole time, working out my body and my brain, so they are still good workouts. So even if you have a bad day, as long as you try, I'm still counting it as a good one!

Cize Day 18 Food

Remember how I said that I had a huge pork loin that defrosted unintentionally. Well, I've had to think of ways to use it. I have never done stir-fry with pork before, but there's a first for everything. It was actually really good.

Veggie and Egg Scramble - green, red
PB&B Shake-o - red, purple, 4 tsps
Cucumber Slices - green
Cottage Cheese, Oats, Orange Bits, and Pecans - red, 1/2 yellow, purple, orange
Pork Stir-fry - red, green, 1.5 yellow

Citrus Bliss Parfait

When I thought up this parfait I figured it would be tasty, but I was actually blown away by just how much I LOVED IT! It was fantastic! Sweet, sour, crunchy, smooth, deliciousness!

Citrus Bliss Parfait

  • 3/4 cup plain yogurt
  • 3 drops citrus essential oils (optional, but recommended - I used lemon, but orange, tangerine, a citrus blend, or any others would be good too. Not only will the oils add to the flavor in a fantastic way, it will also give your a immune system a boost at the same time. Bonus!)
  • 1/2 cup diced pineapple
  • 1/2 cup orange pieces
  • 2 Tbs chopped pecans

Mix together the yogurt and oils. Then add everything else. Then enjoy every little spoonful, and subsequent lick of the bowl.

Exercising Your Brain


If someone were to ask you what you do to exercise your brain what would you say? Most people would say something like Sudoku, cross word puzzles, Scrabble, reading, learning something new, etc. And I agree, all of those things can exercise your brain. But, did you know that physical exercise can also exercise your brain. And I don't just mean that exercise is good for your over all brain health (which it is). Exercise can actually challenge your brain to form new synapses, new neural circuits, new wiring! Now, if you always do the same kind of workout that is not going to form new circuits. It will just reinforce ones already there. But when you do something that actually requires concentration to do (and I don't just mean concentrating on pushing through the pain or something) you are working on new wiring. That is what Cize is for me (or really learning any new dance.) I have to concentrate on how and when to move my body, and some new synapses are formed. Brain exercise! Try it out, it's good for you!

Tip of the Day: Freeze Your Spinach


I don't love going grocery shopping. So, I only go every other week. But I really like produce. I usually buy two pounds of spinach every time I go. Sometimes it starts to wilt before I can get to it. I used to always blend it up and freeze it in cubes to add to smoothies later. But then I learned you can just freeze it as is - not sure why that never occurred to me before. When I do it like this, not only can I add it to smoothies and Shakeology, but my eggs and whatever else! Such a better idea!

I went to lunch with a friend today. I was tempted to get a big burger, and really, if I had, it wouldn't have been a terrible thing. But she ordered this chicken salad, and it sounded good, so I copied. And it was delicious. I ate half at lunch, then half later as a snack. I enjoyed it both times.
When I was deciding what to make for dinner I wanted a way to use tomatoes (remember, they are plentiful in my back yard right now), and I also wanted easy. I remembered having seen a pizzadilla on pinterest a year or more ago. I never tried it, but decided the time had come. Yummy!

Cize Day 16 Menu

Yesterday I discovered that our freezer in our garage was having a problem and a lot of stuff in it had thawed. Among those things was a huge pork loin and some bacon. So I cut the pork loin up and made the "chops" we had last night. I wouldn't normally eat regular bacon while doing a clean eating challenge, but I needed to use it. Plus, the tomatoes coming from my garden are plentiful right now. Thus, my wrap today :).

Finding Happiness

A lot of research has been done on happiness and how good people are at predicting it. People think that once they have more money, a better job, get married, get divorced, have kids, have kids out of the house, lose weight, etc., then they'll be happy. But the truth is that those things don't actually correlate with happiness. Once your basic needs are met money will not increase your happiness. It's the same with all these things. Happiness is a choice and getting to your destination is not likely to truly increase your happiness. As Abraham Lincoln said, People are about as happy as they make up their minds to be.

Confessions of a Beachbody Coach #13


Confession #13: I take Sundays off! I take seriously the commandment that the Sabbath should be a day of rest. And I need that day to recuperate. When I was in middle school I started making sure I never left my homework to Sunday. I remember one time in high school I was given a HUGE packet of math homework to do one weekend. The problem was, it was the same weekend that I had church activities all afternoon and evening Friday, and all day Saturday. I did not have any time to work on the packet. My plan was to wake up early Monday morning and do it all. I had two close friends that not only had the same math teach (and thus the same homework packet) but also had the same church activities over the weekend. They both worked on their packets on Sunday, and they each called me to see how mine was going. When I told them my plan of waking up early Monday morning to do it they both voiced their concern that there was no way I would be able to do it, that they had already spent several hours on it and still hadn't completed it. Now, they are both much more intelligent than me and better at school, so they scared me. But still, I was determined to have that 24 hour period of rest from all labor. So I went to bed around 8 and woke up at 1. I expected it would take me until 5/5:30, at which time I would need to get ready for seminary and school. I GOT IT DONE IN ONE HOUR! The entire thing! And so I went back to bed. My testimony of the importance of using the Lord's gift to us of the Sabbath as a day of rest grew that day. And I still feel confident that when I abstain from all labor on that sacred day I am blessed.
SO, I never do workouts on Sunday. I may go for a walk with my family and/or dog, but that's as strenuous as it gets. I don't do anything that would cause someone else to have to work. I do as little work around my house as possible. And I don't do any business work on Sundays either. My Sundays are all about my God and my family. So if I post anything on Facebook those days it will be about one of those things, God or family. I won't respond to business texts or messages. It's my day off folks. I do, however, stick to my meal plan :).

Broiled Salmon


When I was nursing my son and trying to increase my milk supply I met with a lactation consultant. She told me I not only needed to eat lots of calories, I also need to eat foods rich in fatty acids, like salmon. I was NOT A SALMON FAN! It's too fishy for me, too oily. My husband likes it so often orders it at restaurants since I don't make it. But he was there when the lactation consultant told me to eat salmon. So, he searched for a recipe to be able to make salmon for someone who doesn't normally like it. It is so simple and there aren't many ingredients. But, surprisingly, I really did like it the way he made it, so we keep making it this way. So, whether you already love salmon or you think you don't, try this recipe and see what you think. Because really, salmon is so good for you.

Broiled Salmon - For those who don't like salmon, and for those who do, for everyone!

  • Salmon fillets, BLSL
  • Nonstick EVOO Cooking Spray
  • Salt and Pepper.


Turn on your oven to BROIL (‘high’ setting if your oven has the option).  Place the oven rack on the second highest level (i.e. close to the broiler element).
Place salmon on paper towel and thoroughly pat dry.
Spray both sides with cooking spray.  Sprinkle both sides of the salmon with S&P.
Place a wire rack on-top of a baking sheet or use a broiler pan (I line my baking sheet with parchment paper to make clean up easy!).  Lightly spray the wire rack with cooking spray and place salmon in the middle of the rack with space between the pieces.
Turn on your hood fan & place the baking sheet with the salmon in the oven.
Broil on one side for 7 minutes (until nicely browned).  Flip the salmon and broil the other side for an additional 5 to 7 minutes (or until cooked to your liking!).  Both sides should be nice and crisp, but the inside will remain moist and juicy!
*Note:  this salmon will spit a little while it cooks and create some smoke (hence turning on the hood fan!).  Don’t be worried if it spits on the broiler element, it’ll be just fine.  If your salmon does begin to burn, turn down your broiler to medium or lower your rack.  Broiler heat is known to be temperamental, so just keep your eye on it while it cooks!

Cize Day 14 Menu


A weird thing just happened to me. I was on my way to go to bed when I realized I hadn't eaten the parfait I had planned to today. And then when I was cutting up the watermelon to make it, I realized I hadn't eaten ANY fruit yet today. That never happens to me. I would totally live on fruit if I could. But I just haven't been at all hungry today so I forgot all about it! I know it's not super healthy to eat right before going to bed but it's also not good to eat too few calories, so it just had to happen. Anyway, here is what I ate. 
Veggie and Egg Scramble - red, green
Watermelon - purple
Fajitas - red, yellow, blue
Mint Chocolate Chip Shakeology - red, yellow, green, blue
Minted Watermelon Parfait -
red, purple, orange

Less is More

One of the awesome things about Shakeology is that it is SO nutrient dense. You literally get more nutrition in a single serving than you would normally get from several days of eating. And you get all that nutrition with only 170 calories (give or take, depending on flavor)! And even with so few calories, because you're giving your body so many nutrients, it helps decrease hunger and cravings! I know it has helped me feel more full and makes it easier for me to not snack or indulge in sugary sweetness. My shake is usually all the treat I need. So I eat less, and like the Chinese say "The more you eat, the less flavor, the less you eat, the more flavor." So get some Shakeology and increase the flavor in your life!

If only green veggies smelled like bacon....

But seriously people, eat your vegetables! They not only will help you live longer, they will help you brain function longer so that you can enjoy that extended life.

Cize Day 13 menu

Another day of delicious clean eating. It was all tasty. Chocolate Banana Nutter Shakeology is my go to - it's delicious and I pretty much always have the ingredients. I make it a lot, and pretty much the same every time. So I am not sure why tonight's was different, but somehow I got it right on because it was the best I've ever done! It was PERFECTION! Thick and creamy and delicious! Hopefully I'll be able to replicate it again!

Salsa, Spinach, and Egg Scramble - red and green
Mixed Berry Parfait - red, 1/2 yellow, 1/2 purple, orange
Watermelon - 1/2 purple
Chicken and white sauce Mexican Lasagna (recipe to come), plus steamed broccoli - red, 1.5 yellow, blue, 2 green
Chocolate Banana Nutter Shake-o - red, purple, 2 tsp

Mint Chocolate Shake-o

How do you feel about Andes Mints? If you are a fan then you are going to LOVE this. It's like drinking them. It's smooth and delicious. And it doesn't add many calories beyond a plain Shakeology. Bonus!

Mint Chocolate Shake-o
1 scoop Chocolate or Vegan Chocolate Shakeology
1-1.5 cups water or almond milk (or other milk of choice)
1/4 tsp mint extract OR 3 drops peppermint essential oils* OR substitute all the the liquid for 1-1.5 cups mint infused water (the night before fill a glass with fresh mint leaves, then pour in a 1-1.5 cups water. Leave in the fridge over night, then when you're ready to make your shake strain the water.)
1-2 cups ice
Fresh mint leaves for garnish (optional)

Blend it, then drink it while thinking about how you are getting all the sweet wonderfulness of Andies mints, but this is actually GREAT for you!

Don't Be A Pain

Don't you just love Maya Angelou? I do! So wise!

I am just starting my third week of Cize. Although it is definitely not as intense a workout as 21 Day Fix Extreme was, I still started off sore from doing it. It seemed kind of strange since after a few days of 21 DFX I didn't get sore anymore even though I was pushing myself. But I guess that's the thing about changing your workout up. Your body will get used to moving in certain ways, so even if you challenge yourself with heavier weights or more resistance or going faster, your body already knows how to move in that way. When you change up your workout and make your body more in a new way, you start using different muscles. So it's just a different kind of a challenge. So remember, even if you love your workout (whether it be a video, or running, or just doing weights, or whatever) it's still good to change it up sometimes! And even though you may feel more pain, you don't need to be a pain ;).

Cize Day 12 Menu

Another day of Cize, another day of clean, healthy, real food that tastes great! Do you see how my spoon is resting on top of my Shakeology? That's because I like it thick like ice cream, so I eat it with a spoon. My husband likes it thinner and drinkable. I put about twice as much ice in mine as he does. Good thing it can be made to taste ;).

Salsa and Veggie Scramble - red, green
Chocolate Banana Nutter - purple, red, 2 tsps, 1/2 yellow (I made it with almond milk)
Cottage Cheese, Mango, and Almonds - red, 1/2 purple, orange
Steak Fajitas with beans - red, green, blue, 1.5 yellow (I actually divided mine into 3 fajitas tonight - could have been just 2 though, which would be 1 yellow)

Cize Day 11 Menu

My delicious eats - mmmm I wasn't sure what I would end up having for dinner because my husbands parents were coming over and I didn't know if we'd be going out or what. So I started my day with my scramble, my shaken shake, and baby bells (which is only 2 reds and 2 greens). By the time dinner was over I still had both purples plus my orange and 2 tsps. So, I decided it was a good time to try another dip I had been thinking about. It was tasty too!
Scramble - red and green
Shaken Chocolate Cinnamon shake-o - red

Fajitas (with rice and beans and cheese and guac) - red, 2 yellows, green, blue
Peanut Butter Cookie Dough Dip with apples - 2 purples, 2 fats (it should have been 4 tsps but I traded my orange for two of them. It was worth it.)

Confession: I AM CHEAP!!! Like, I may be the cheapest person I know. Both of my kids are clothed almost entirely of hand-me-downs, and so am I. I hate having to run the a/c or heater so before we had kids the thermostat was set yo 60 in the winter and 80 in the summer (now it's between 68 and 78). Frosted Lemonade Shake-o

This is a fun summer-time treat, especially if you like lemonade, which I do.

Frosted Lemonade Shake-o
1 scoop vanilla Shakeology
1 cup cold water
3-4 Tbs fresh squeezed lemon juice
1 cup ice (or more)
Lemon zest for garnish (optional)
Blend it, tip with zest (if desired) drink it up!

Cize Day 10 Menu

Oh.my.word you guys! I ate so good today. I mean, it tasted SO GOOD! And it was all good for me. And easy to make!
Have you ever had a day when you enjoyed your food so much you felt like you could eat the same thing every day, for the rest of your life, and be totally content? That's how I felt about my food today. 
When I finished my morning workout I didn't feel like eating eggs right away like I usually do. I was about to make a shake but then felt like I really wanted to chew something. So I came up with this Brownie Batter Dip. It was AMAZING! Seriously. Dessert for breakfast! And without any guilt because I was eating so many vitamins and other nutrients! Don't worry, I'll type up the recipe and share it with you soon so you can enjoy it too!
And then I came up with this Citrus Bliss Parfait - sweet goodness it was good.
Tried a new fajita recipe. I will tweak the recipe the next time I make them to fit my tastes a little more, but still totally enjoyed them.
Anyway, it was all amazing!

Zucchini Tuna Cakes

I saw this recipe on Pinterest the other day. (It comes from chocolatesalad.com.)
I had some zucchini I needed to use so I decided to try it out. I really liked them. They're super healthy and a good way to pack in the protein and also some veggies! I ate them with the dill sauce that was in the original recipe and thought it was good. But they would also be good topped with some fresh salsa, or even eaten as burgers. Try them and let me know your favorite way to enjoy them!

Zucchini Tuna Cakes

  • 1/2 medium zucchini (about 100 g) grated, and liquid squeezed out
  • 1 can tuna, drained
  • 2 T oats
  • 2 T shredded cheese
  • 1 large egg
  • 1/4 t garlic salt
  • 1/4 t dill
  • 1/4 t onion powder
  • fresh ground pepper

Lemon Dill Sauce:
  • 2 T greek yogurt
  • 1 t lemon juice
  • 1/4 t dill
  • 1/4 garlic salt

Instructions

  1. Grate up about half of a medium sized zucchini or about 100 grams (it should be about 1 cup before squeezing out the liquid). Dump all that grated zucchini into a thin dish towel or cheese cloth and wrap all the sides up around it forming a ball. Twist the cloth at the top, right above the ball of zucchini, and keep twisting it as tight as you can to squeeze as much liquid out of the zucchini as possible. Once you have squeezed long enough that no more liquid is coming out open it up, then twist it up and squeeze again. Keep repeating until you con't get any more liquid out.
  2. In a mixing bowl, add the squeezed zucchini and all the other cake ingredients and mix well together.
  3. Heat a medium frying pan to medium low. Spray with non stick spray.
  4. Grab half the mixture and form it into a ball. I did this over teh sink because more liquid started coming out as I balled it, so I squeezed some more out. Then flatten it into a round cake (think hamburger patty - about 1/2 inch thick.) Place it in the frying pan, then do the rest the same way. Let them cook for about 5-6 minutes on medium low. You can check the bottom if you want, so when it gets a little crispy and golden brown, flip it over with a spatula and let it cook about the same amount on the other side.
  5. While the cakes are cooking, you can mix up your lemon dill yogurt sauce. Just mix the yogurt, lemon juice, dill, and garlic sauce in a small bowl and set it aside. *Alternatively you can mix the sauce together an hour or two ahead of time and let chill in the fridge until you are ready so the flavors have some extra time to mix.
  6. When the cakes are ready, scoop them out onto a plate and put all the yogurt sauce on top.
Note: This recipe is just for one serving, so if you're feeding your family as well you will need to multiply it. I tripled it when I made it and it worked just fine.

Cize Day 8 Menu


One of my favorite things about summer is that it's tomato season. And tomato season means SALSA! Fresh salsa. Fresh as in I go into my backyard and get some tomatoes and cilantro and then make them into salsa. It is awesome. And I love it. And so I put salsa with everything I can think of. As you can see from my menu today!

Salsa and Veggie Egg Scramble - 1 green, 1 red (the link will just take you to my typical scramble recipe - I just added some salsa in place of tomatoes here.)
Salmon, Roasted Cauliflower, and Whole Wheat Angel Hair Topped with Salsa - 1 green, 1 red, 1 yellow
Fruited Kale Salad - 1 green, 1/2 purple, 1 orange (the recipe calls for avacado, but I left it off so I could have cheese with my burrito)
Bean Burrito - 1 red, 1 blue, 1/4 green, 1 yellow (beans are typically counted as a yellow, but sometimes I count them as a red - it is allowed for those following a vegetarian diet - and sometimes I want to not eat meat - but count it as another yellow if you want)
Simple Shaken Chocolate Shake-o - 1 red
Apples with Cinnamon and Peanut Butter - 1.5 purple, 2 Tsp

Cinnamon Apple Parfait


I love yogurt. I love parfaits. They're so versatile. You really can put it whatever suits your fancy. But this is one that I frequently through together, because, as they say, an apple a day keeps the doctor away. Plus, pecans and cinnamon are also super good for you!

Cinnamon Apple Parfait
3/4 cup plain yogurt (Greek or not, your choice)
2 Tbs rolled oats
1/2 cup diced apple
2 Tbs chopped pecans
Cinnamon to taste
1/2 stevia (optional)

Mix it all together. That's it. Super simple. Super yum!
