Brownie Scramble with Peanut Butter Syrup

I woke up yesterday and the idea for this came into my head, I'm not sure why. But I decided to make it, and fell in love. Do you think chocolate and peanut butter are meant to be together? Do you love peanut butter cups? Do you love brownies? If so, you may just love this too. Now, this isn't the lowest calorie meal. If I were holding to 21 Day Fix containers I probably wouldn't make it often because it would use a lot of containers. That said, it's super HEALTHY, very FILLING, totally SATISFIES SWEET-TOOTH cravings, and it's YUMMY!


Brownie Scramble 
1 small banana (or half a large)
2 eggs
1 scoop Vegan Chocolate Shakeology
Evoo or coconut oil

Peanut Butter Syrup
2 Tsp PB
1 Tsp pure maple syrup

Mash up your banana. Add the eggs and Shakeology and mix until well combined. Pour into a heated skillet coated with EVOO or coconut oil and stir until cooked through. Combine PB and syrup and heat in the microwave for a bit. Then put on top of your scramble. Then enjoy the sweet chocolatey, peanut buttery goodness and feel good that you have just done something great for your body.

Fuzzy Chocolate

We have a peach tree in our backyard. Every other year we get tons of peaches. Like, at least 100 pounds of them. Two years ago we got so many that nearly half the branches on our tree broke from their weight. We should have thinned them, lesson learned. Even with only half the branches we used to have we still got at least 10 grocery bags full of peaches. We give loss away but even so we can'teat them fast enough. So, we freeze most of them to throw in smoothies throughout the year. Unfortunately for my husband the peaches ripened this year while I was away on a nearly month long vacation. So, he spent pretty much all his evenings for about two weeks prepping and freezing peaches. Lucky for me or freezer is now stocked with his hard work. I decided to try adding peaches to my shake today. Holy sweet goodness! So smooth and creamy and AWESOME! Grab yourself some Shakeology and frozen peaches and try it!

Mint Chocolate Chip Milkshake-o


If you like mint chocolate chip ice cream and shakes then this one is for YOU!

Mint Chocolate Chip Milkshake-o

  • 1 scoop Vanilla Shakeology
  • 1-1.5 cups almond milk
  • 1/4-1/2 tsp peppermint extract (to taste) OR 3 drops peppermint essential oils*
  • 4 drops green food coloring (optional)
  • 1/2 small avocado (optional - makes it creamier, but also adds calories)
  • Handful of spinach (optional - but easy way to get more veggies in)
  • 1 Tbs mini dark/semi-sweet chocolate chips


Blend everything except the chips. After you have poured your shake into a glass mix in the chips with a spoon. Then feel good about eating a dessert that is making you healthier!

Peanut Butter Cookie Dough Dip


After I came up with, and immediately fell in love with, the brownie batter dip, I started dreaming up other dip ideas. I love peanut butter cookies. And I love peanut butter with apples. And I totally loved dipping my apples in this super healthy and nutrient dense Peanut Butter Cookie Dough Dip!

Peanut Butter Cookie Dough Dip
1 scoop Vanilla Shakeology
1/4 cup almond milk (or water or other milk of choice)
4 tsps PB, chunky or smooth (the real stuff made from just peanuts - I made it with smooth but I think I would like it even better with chunky) * 4 tsps = 1 Tbs plus 1 tsp
Add some cinnamon if you want :)

Mix it all together, then start dipping. I loved it with apples but bananas would be good to, or anything really. And remember, no guilt, because you're eating your healthiest meal of the day!

Peaches and Cream Shake-o


If you are looking for a creamy summertime treat look no further!

Peaches and Cream Shake-o
  • 1 scoop Vanilla Shakeology
  • 1-1.5 cups almond milk (or water or other milk of choice)
  • 1-2 fresh peaches (go ahead and leave the skin on, more nutrients) or 1-2 cups frozen peach slices
  • 1-2 cups ice

Peanut Butter Milkshake-o

While my husband and I were engaged I got some wisdom teeth pulled. That night, since my mouth was sore, my super sweet mom went on a run to Jamba Juice to get us some smoothies. She got some for all of us. Ryan, my husband, asked for a peanut butter one. My mom about gagged. You have to understand, my mom does not like peanut butter. All my life she'd make everyone else in the family PB&J, but never for herself. She's just not a fan. And she could not comprehend why anyone would choose to have a peanut butter smoothie. And the truth is, I would never have considered ordering one either. But when I tried Ryan's I realized it was actually really good.
Well, now, for less money, calories, and sugar, and way more nutrition, I can make this tasty treat that is just as satisfying.

Peanut Butter Milkshake-o

  • 1 scoop Vanilla Shakeology
  • 1-1.5 cups almond milk (or water or other milk of choice)
  • 1 Tbs peanut butter (all natural, peanut only PB)
  • 1/2 small avocado (optional - but it makes it creamier)
  • 1-2 cups ice (depending on desired thickness)
Blend it up! Enjoy!

Almond Joy Shake-o

I LOVE Almond Joys! I love Mounds too! I love that sweet coconutty goodnes wrapped in chocolate. I like them with the crunchy almond in there, and without. I just love them. This tasty creation is stronger on the chocolate and weaker on the coconut than the candy bar, I'm not going to lie. But even still, the coconut, chocolate, and optional almond mix is still fantastic!

Almond Joy (or Mounds) Shake-o
1 scoop Chocolate or Vegan Chocolate Shakeology
1-1.5 cups coconut milk (or water or other milk of choice)
1/4-1/2 cup shredded coconut (unsweetened is healthiest, obviously)
1/4-1/2 tsp coconut extract (optional)
1-2 cups ice
Optional garnish - 2 tsp mini semi-sweet chocolate chips, 2 tbs sliced almonds, 2 tsps shredded coconut

Blend it up! And be proud of yourself for doing something good for your body.

Simply Shaken Chocolate Shake-o

I really enjoy making up different types of Shakeology concoctions, usually in my blender. But sometimes I'm in a hurry, or I don't feel like having to clean up the blender mess, or I don't want to use any more containers or add any more calories, or I'm just in the mood for something even more simple. And when that happens, I simply shake up some Shake-o.

Simply Shaken Chocolate Shake-o
1 scoop chocolate or vegan chocolate Shakeology
1-1.5 cups water or almond milk (or other milk of choice)
ice (as much as you want to make it as cold as you want)

Put all the ingredients in a shaker cup or water bottle or something and just shake it up. Like I told you - simple!

If you want to change up the flavor there are lots of easy mix in options: Spices (cinnamon, nutmeg, cayenne if you want it spicy, etc.), Extracts (vanilla, coconut, strawberry, caramel, orange, almond, etc.), Essential Oils* (cinnamon, orange, tangerine, etc.), Cinnamon Oil (like you would use to make cinnamon toothpicks or candy), powdered peanut butter (like PB Fit.)

Brownie Batter Dip

Do you ever find yourself licking the bowl that just held your brownie batter? And enjoying it quite a bit? And thinking that maybe you shouldn't even bother baking those brownies? If so, I have fantastic news for you. This tastes just like brownie batter, but it is HONESTLY HEALTHY. It doesn't just not have raw eggs, or flour, or butter, or oil, or anything considered even remotely unhealthy. In fact, it is so packed with nutrition that eating it you will get all the nutrients it would usually take several days of eating to be able to consume. It is packed with 17 grams of protein, plus the equivalent of eating 9 servings of fruits and vegetables! And it's only around 200 calories! And it takes less than a minute to make!

Honestly Healthy Brownie Batter Dip
1 scoop Chocolate or Vegan Chocolate Shakeology
6-8 Tbs almond milk (depending on desired thickness - or water or other milk of choice)

Just mix it together. Then get some apple slices, or bananas, or strawberries, or oranges, or a spoon, or your finger (I DON'T CARE WHAT) and DIG IN! And yes, you can totally eat the whole thing yourself - you do NOT have to share. So hide in a closet it you must. If share if you feel so inclined. Or tell them to make their own, it's easy enough. But don't feel guilty for one second about eating this decadent dessert for breakfast. Or lunch. Or dinner, Or dessert. Or all day long! WHENEVER! It is so healthy you should eat whenever you are in the mood!

There are lots of optional mix-ins if you wanted to change up the flavor too: PB or powdered PB, spices (cinnamon, nutmeg, etc.), essential oils* (orange, tangerine, cinnamon, peppermint, etc.), extracts/flavors (vanilla, almond, coconut, orange, strawberry, etc.) cinnamon oil for candy making, whatever else you can think of. Have fun with it.

Pina Colada Shake-o

Such a fun summertime treat. Or any time really! I have always loved non-alcoholic versions of this frozen drink and now I can drink it without any guilt because when I do I'm fueling my body with super-foods!

Pina Colada Shake-o
  • 1 scoop vanilla Shakeology
  • 1-1.5 cups coconut milk
  • 2 Tbs shredded coconut (preferably unsweetened)
  • 1 cup pineapple chunks
  • 1-2 cups ice
  • 1/4 tsp coconut extract (optional)
Blend it up! That's it. Enjoy!

Orange Julius Shake-o

You'e seen the Orange Julius restaurants in the mall. Have you tried one of their tasty creations? Well, if you have, and if you liked it, then be sure to try this one! Just as tasty, costs the same (maybe less), and WAY better for you. Plus, since you can make it yourself, you can have it any time you want!

Orange Julius Shake-o

  • 1 scoop vanilla Shakeology
  • 1-1.5 cups almond milk (or water or other milk of choice)
  • 1-2 cups orange juice concentrate (Depending on how sweet and flavorful you want it and also how many calories and grams of sugar you want. I recommend trying it with 1 cup and if you think you need more then add some.
  • 1/4 tsp vanilla (optional)
  • 1-2 cups ice


Blend it all up and enjoy!

Citrus Bliss Parfait

When I thought up this parfait I figured it would be tasty, but I was actually blown away by just how much I LOVED IT! It was fantastic! Sweet, sour, crunchy, smooth, deliciousness!

Citrus Bliss Parfait

  • 3/4 cup plain yogurt
  • 3 drops citrus essential oils (optional, but recommended - I used lemon, but orange, tangerine, a citrus blend, or any others would be good too. Not only will the oils add to the flavor in a fantastic way, it will also give your a immune system a boost at the same time. Bonus!)
  • 1/2 cup diced pineapple
  • 1/2 cup orange pieces
  • 2 Tbs chopped pecans

Mix together the yogurt and oils. Then add everything else. Then enjoy every little spoonful, and subsequent lick of the bowl.

Cinnamon Apple Parfait


I love yogurt. I love parfaits. They're so versatile. You really can put it whatever suits your fancy. But this is one that I frequently through together, because, as they say, an apple a day keeps the doctor away. Plus, pecans and cinnamon are also super good for you!

Cinnamon Apple Parfait
3/4 cup plain yogurt (Greek or not, your choice)
2 Tbs rolled oats
1/2 cup diced apple
2 Tbs chopped pecans
Cinnamon to taste
1/2 stevia (optional)

Mix it all together. That's it. Super simple. Super yum!

21 Day Fix counts - 1 red, 1/2 yellow, 1/2 purple, orange (you can factor in the optional stevia into your yellow count if you want.)

Pepper Jack Egg Scramble

My new obsession... Usually if I add cheese to my egg scramble is cheddar or 4-cheese Mexican blend. But a few days ago when I went to grab one of those I saw some pepper jack that needed to be used and I didn't have a plan for it. I decided to try it. Oh.my.goodness! It was amazing! French Toast Scramble

I've mentioned before how much I love my veggie scrambles, and omelets, for breakfast. They're still my go to breakfast. But sometimes it's nice to change things up. Today I tried something new, a French toast scramble. It's a grain-free French toast so it works for a paleo diet. It was quite yummy! 
French Toast Scramble
-------------------------------------
1 banana, mashed
2 eggs (or 1 egg and 2 egg whites)
1 tsp. cinnamon
1/2 tsp. pure vanilla extract
coconut oil or EVOO

Optional toppings
2 tsp. nut butter of choice
1 tsp. Pure maple syrup or honey or agave (alternatively you could mix this or other sweetener if choice into batter before cooking)

Directions
Combine banana with eggs. Add the cinnamon, and vanilla (and sweetener if you choose). Coat a skillet with coconut oil or EVOO over medium heat.

Pour batter in skillet and cook until eggs are no longer runny, stirring frequently.

Add desired toppings. Take a picture, post, and tag me :). Enjoy!

Omelet Love


I eat a lot of egg scrambles because they're so fast and easy and I enjoy them. But if I have cheese available too eat with my eggs then an omelet is my fav! First I cooked my turkey bacon and chopped it up, then sauteed my veggies (spinach, tomatoes, bell pepper, onions), then stuffed it all into the omelet with some cheese! ‪#‎yumyumyum‬ ‪#‎quickeazyhealthydelicious‬‪#‎realfood‬ ‪#‎beachbodycoach‬

Fried Egg Grilled Cheese Sandwiches








Fried egg grilled cheese sandwiches. They're amazing. It's important that you fry the egg the right way. No slimy eggs, no hard yolks. Check out my sister's blog to learn how to make them the right way. So, when I'm making these addictive sandwiches I first make the eggs. Then I do the sandwich. I like cheese on both sides of the eggs, so I slice the cheese thin and put it on top of buttered bread. Medium heat. Let the cheese melt, then assemble the sandwiches. Poke a hole in the yolk sac, squeeze the yolk out, then spread it around. That's it. So easy. Put it with some salad and some fruit and you have all food groups represented. That's it. Egg and Veggie Scramble

Veggie and egg scramble - I eat one almost every day. Basically a cup of veggies and 2 eggs scrambled. Here's how I most frequently make it:
Spray pan with EVOO. Throw in 1/2 cup spinach, slice 1/2 cup grape tomatoes and throw it in, dice 1/4 cup bell pepper (it's about 1/8 - 1/4 of a pepper, depending on size - I don't like green ones but I rotate between other colors) and throw it in. Sprinkle veggies with sea sale or pink Himalayan salt (or a mix), beat two eggs in a bowl and pour it in, and scramble it all together. If I don't have plans for my blue container for the rest of the day I'll add 1/3 cup cheese, or top with avocados. Other veggies I like in there are kale and asparagus.
