Brownie Scramble with Peanut Butter Syrup

I woke up yesterday and the idea for this came into my head, I'm not sure why. But I decided to make it, and fell in love. Do you think chocolate and peanut butter are meant to be together? Do you love peanut butter cups? Do you love brownies? If so, you may just love this too. Now, this isn't the lowest calorie meal. If I were holding to 21 Day Fix containers I probably wouldn't make it often because it would use a lot of containers. That said, it's super HEALTHY, very FILLING, totally SATISFIES SWEET-TOOTH cravings, and it's YUMMY!

Brownie Scramble
1 small banana (or half a large)
2 eggs
1 scoop Vegan Chocolate Shakeology
Evoo or coconut oil

Peanut Butter Syrup
2 Tsp PB
1 Tsp pure maple syrup

Mash up your banana. Add the eggs and Shakeology and mix until well combined. Pour into a heated skillet coated with EVOO or coconut oil and stir until cooked through. Combine PB and syrup and heat in the microwave for a bit. Then put on top of your scramble. Then enjoy the sweet chocolatey, peanut buttery goodness and feel good that you have just done something great for your body.

Take a Chance

Peaches and cottage cheese. So, so easy, quick, delicious, and good for me!
I spent most of my life thinking I didn't like cottage cheese. I didn't care for it as a kid and so I just never ate it and thought it was because I didn't like it. Then I decided to give it a try about 5 years ago. And I totally liked it! Now eating cottage cheese with some fruit is one of my favorite treats! If I hasn't decided to try it that one day 5 years ago I would still be avoiding it.
Maybe you have tried diet drinks in the past. Or protein shakes. And didn't care for them or get the results you wanted. And you don't want to try any more. Or maybe you've tried eating healthy and it only made you cranky. Or you just don't like to exercise? Well, if you'll give me a chance, I'll try to show you that you will LOVE Shakeology, that you can enjoy eating and get all the right nutrition for your body, and that there's a workout program that's right for YOU! What if I told you that if you took the chance you'd be protected with a money back guarantee so if I'm wrong you haven't lost anything. Would you be ready to take a chance then?

Roasted Cauliflower

I've mentioned my roasted veggie love before. They're my fav. But of all the roasted veggies in the world roasted cauliflower is hands down my absolute all time favorite! Seriously, I could eat it all day. Every day. It's addictive. It's sweet and salty and crunchy but soft. It's amazingly fantastic. Even if you think you don't like vegetables you should try it, because you will be a veggie convert! Honestly, it's that good. And, did you know veggies that kind of look like brains, such as cauliflower, are actually really good for your brain? Now you do.

Roasted Cauliflower
1 head of cauliflower
1-2 Tbs EVOO (depending on the size of the head)
garlic salt to taste (alternatively you could use sea salt and garlic powder, but I think garlic salt is just easier and I like it so I still use it, even if it isn't considered 100% clean.)

Preheat oven to 450 degrees. Cut cauliflower into bite-sized florets.
Put them in a produce bag (or ziplock if that's what you have.) Pour in the EVOO and sprinkle in the garlic salt. Twist the top of the bag trapping air inside (or zip the bag as the case may be.) Bounce the cauliflower around until it is evenly coated. Lay the cauliflower out on foil lined cookie sheet (just makes clean up easier) in a single layer with a little bit of space between florets. Roast until cauliflower is golden brown - 30ish minutes.

Peanut Butter Cookie Dough Dip

After I came up with, and immediately fell in love with, the brownie batter dip, I started dreaming up other dip ideas. I love peanut butter cookies. And I love peanut butter with apples. And I totally loved dipping my apples in this super healthy and nutrient dense Peanut Butter Cookie Dough Dip!

Peanut Butter Cookie Dough Dip
1 scoop Vanilla Shakeology
1/4 cup almond milk (or water or other milk of choice)
4 tsps PB, chunky or smooth (the real stuff made from just peanuts - I made it with smooth but I think I would like it even better with chunky) * 4 tsps = 1 Tbs plus 1 tsp
Add some cinnamon if you want :)

Mix it all together, then start dipping. I loved it with apples but bananas would be good to, or anything really. And remember, no guilt, because you're eating your healthiest meal of the day!

The Pizzadilla

I saw something like this on Pinterest years ago and never got around to trying it out. And now that I have, I wish I had tried it years ago! Think pizza meets quesadilla, because that's what it is. You can make it however you like, basically you take anything you'd put on a pizza, and put it on a tortilla. You just make it like you would a quesadilla, on a pan on the stove, over medium heat. You can make it however you like! What I did was take a whole wheat tortilla, lay it on my pan, and sprinkle on some mozzarella cheese. I let that melt a bit, then spread a thin layer of tomato sauce on that. I put a layer of spinach on one half and a layer of tomato slice on the other. Once they were warmed through I folded it up, sliced it, and wondered why it had never occurred to me to make such a creation before. We've had them several times since! Yum!

Peanut Butter Milkshake-o

While my husband and I were engaged I got some wisdom teeth pulled. That night, since my mouth was sore, my super sweet mom went on a run to Jamba Juice to get us some smoothies. She got some for all of us. Ryan, my husband, asked for a peanut butter one. My mom about gagged. You have to understand, my mom does not like peanut butter. All my life she'd make everyone else in the family PB&J, but never for herself. She's just not a fan. And she could not comprehend why anyone would choose to have a peanut butter smoothie. And the truth is, I would never have considered ordering one either. But when I tried Ryan's I realized it was actually really good.
Well, now, for less money, calories, and sugar, and way more nutrition, I can make this tasty treat that is just as satisfying.

Peanut Butter Milkshake-o

  • 1 scoop Vanilla Shakeology
  • 1-1.5 cups almond milk (or water or other milk of choice)
  • 1 Tbs peanut butter (all natural, peanut only PB)
  • 1/2 small avocado (optional - but it makes it creamier)
  • 1-2 cups ice (depending on desired thickness)
Blend it up! Enjoy!

Mango Parfait

I LOVE parfaits for a mid-day snack. Or a dessert. Or breakfast. Or whatever really. I am a huge fan of fruit and if I could get all my needed nutrients by just eating fruit I would totally do it! But I can't, dang it. Oh well, this delicious treat is so enjoyable I am happy to eat my fruit combined with other deliciousness. And, when possible, it is good to eat your fruit in accompaniment with protein. So this is perfect.

Mango Parfait

  • 3/4 cup plain yogurt
  • 2 Tbs rolled oats
  • 1/2 cup diced Ataulfo mango (red mango works too, I just like the creamy smoothness of Ataulfo)

21 Day Fix container counts - red, 1/2 yellow, 1/2 purple

Almond Joy Shake-o

I LOVE Almond Joys! I love Mounds too! I love that sweet coconutty goodnes wrapped in chocolate. I like them with the crunchy almond in there, and without. I just love them. This tasty creation is stronger on the chocolate and weaker on the coconut than the candy bar, I'm not going to lie. But even still, the coconut, chocolate, and optional almond mix is still fantastic!

Almond Joy (or Mounds) Shake-o
1 scoop Chocolate or Vegan Chocolate Shakeology
1-1.5 cups coconut milk (or water or other milk of choice)
1/4-1/2 cup shredded coconut (unsweetened is healthiest, obviously)
1/4-1/2 tsp coconut extract (optional)
1-2 cups ice
Optional garnish - 2 tsp mini semi-sweet chocolate chips, 2 tbs sliced almonds, 2 tsps shredded coconut

Blend it up! And be proud of yourself for doing something good for your body.

Roasted Green Beans

By far, my favorite way to cook vegetables is to roast them. I love them slightly crisp, and the sweetness that comes form them caramelizing a bit. I haven't found a veggie yet that I don't like roasted. Admittedly, I haven't tried them all, like I've never roasted lettuce. But all the ones I've tried roasting I have enjoyed. And green beans are definitely not an exception. Crispy roasted green beans are a-ma-zing! And they make a great side to pretty much any dinner.

Roasted Green Beans

  • Green Beans
  • Extra Virgin Olive Oil
  • Garlic Salt

Preheat oven to 400 degrees. Rinse green beans and trim ends. I like to break them all in half so they fit in my mouth without having to cut them later, but it's not necessary. Throw them all in a produce bag, or a ziplock bag. Pour in some olive oil. This is one of those annoying recipes without exact measurements, because I never measure since I have different amounts of green beans each time. Basically you want enough EVOO to coat the beans but not drown them. I'd say I usually pour in about 1 tbs EVOO per pound of beans. Then sprinkle on garlic salt to taste. Spin the top of the bag (or zip it), then bounce the beans around until they are evenly coated with EVOO and garlic salt. Lay them out in a single layer on a foil lined cookie sheet (it just makes clean up easier, but isn't necessary). Put them in heated oven until they start to get crispy, about 30 minutes. That's it, easy peasy and so delicious!

Simply Shaken Chocolate Shake-o

I really enjoy making up different types of Shakeology concoctions, usually in my blender. But sometimes I'm in a hurry, or I don't feel like having to clean up the blender mess, or I don't want to use any more containers or add any more calories, or I'm just in the mood for something even more simple. And when that happens, I simply shake up some Shake-o.

Simply Shaken Chocolate Shake-o
1 scoop chocolate or vegan chocolate Shakeology
1-1.5 cups water or almond milk (or other milk of choice)
ice (as much as you want to make it as cold as you want)

Put all the ingredients in a shaker cup or water bottle or something and just shake it up. Like I told you - simple!

If you want to change up the flavor there are lots of easy mix in options: Spices (cinnamon, nutmeg, cayenne if you want it spicy, etc.), Extracts (vanilla, coconut, strawberry, caramel, orange, almond, etc.), Essential Oils* (cinnamon, orange, tangerine, etc.), Cinnamon Oil (like you would use to make cinnamon toothpicks or candy), powdered peanut butter (like PB Fit.)

If you don't have any Shakeology yet let's fix that! Contact me at: amandacolbyfitness@gmail.com and we'll talk about ways you can get it at a discount!

Tip of the Day: Meal Planning for 21 Day Fix Etc.

I've mentioned before that I knew about 21 Day Fix for over a year before I finally tried it. And one of the main reasons for that was because I was intimidated by trying to figure out meal plans with the containers. It was super overwhelming to me. I had to make a complete 21 day meal calendar, with all meals and snacks included, before I could start it. It took a lot of time to put it all together. But I loved having it. I didn't have to decide what I would make for dinner every night (one of my least favorite things to do) because I already had it planned out. It was great. I stuck to it exactly the first two times I did 21 and pretty close to it the second two times. But then I started wanting to be able to be more spontaneous with what I ate each day. And it was okay because having done the container thing for 84 days (4 rounds of 21 days) I had become much more comfortable with how to incorporate them into my regular meal planning.
Here is what works best for me. First, I decide what I'm going to make for dinner. It's the most important one because it is the one meal my whole family has to eat with me (I do not cook a separate dinner for them.) I note what containers I'll use for that. Lunch will hopefully be leftovers from last nights dinner, I note the containers needed for that. Breakfast is usually a veggie and egg scramble. That's a red and a green. If I decide I'm in the mood for something else then I decide on what and note the container counts. Depending on what containers I have left I next decide what kind of Shakeology I'll have, and then divide the remainder into snacks.
So, once I had recipes that were not only 21 Day Fix approved, but I knew the container counts for servings, it got easy. And often I just keep it simple, like dinner is a meat, a veggie, and a carb (grain or sweet potato usually - red, green, yellow.) Lunch will be pretty much the same. Veggie scramble for breakfast. So with the 3 main meals I've used 3 greens, 3 reds, and 2 yellows. That means I still have 2 purples, red, blue, orange, and 2 tsps (unless the tsps have to be used to cook the meat). The red will be the Shakeology for sure. I can add some fruit and/or a nut butter to it (using a purple &/or 2 tsps - or sometimes I trade a blue or orange for an extra 2 tsps, shhh don't tell.) Then I can have another cup of fruit and some almonds for a snack. Obviously this isn't always what I end up doing, but usually something similar. It's really not as complicated or difficult as it first seemed to me.

Cize Day 28 Menu

Chocolate banana nutter shakeo - red, purple, 4 tsps
Veggeti topped with sauteed tomatoes - 2 green
Mixed berry parfait (plain yogurt, berries, slivered almonds) - red, purple, orange
Southwestern chicken with rice and salsa - southwestern chicken with rice and salsa - 2 reds, green, yellow

Brownie Batter Dip

Do you ever find yourself licking the bowl that just held your brownie batter? And enjoying it quite a bit? And thinking that maybe you shouldn't even bother baking those brownies? If so, I have fantastic news for you. This tastes just like brownie batter, but it is HONESTLY HEALTHY. It doesn't just not have raw eggs, or flour, or butter, or oil, or anything considered even remotely unhealthy. In fact, it is so packed with nutrition that eating it you will get all the nutrients it would usually take several days of eating to be able to consume. It is packed with 17 grams of protein, plus the equivalent of eating 9 servings of fruits and vegetables! And it's only around 200 calories! And it takes less than a minute to make!

Honestly Healthy Brownie Batter Dip
1 scoop Chocolate or Vegan Chocolate Shakeology
6-8 Tbs almond milk (depending on desired thickness - or water or other milk of choice)

Just mix it together. Then get some apple slices, or bananas, or strawberries, or oranges, or a spoon, or your finger (I DON'T CARE WHAT) and DIG IN! And yes, you can totally eat the whole thing yourself - you do NOT have to share. So hide in a closet it you must. If share if you feel so inclined. Or tell them to make their own, it's easy enough. But don't feel guilty for one second about eating this decadent dessert for breakfast. Or lunch. Or dinner, Or dessert. Or all day long! WHENEVER! It is so healthy you should eat whenever you are in the mood!

There are lots of optional mix-ins if you wanted to change up the flavor too: PB or powdered PB, spices (cinnamon, nutmeg, etc.), essential oils* (orange, tangerine, cinnamon, peppermint, etc.), extracts/flavors (vanilla, almond, coconut, orange, strawberry, etc.) cinnamon oil for candy making, whatever else you can think of. Have fun with it.
