Tip of the Day: Drink More Water

There are even more health benefits from drinking water not depicted in this picture. Seriously, you need water! How much water do you need? Take your weight, divide it in half, and drink that many ounces of water a day. So, if you weigh 120 pounds, you should drink 60 ounces of water a day. At a minimum. Drink more than that if possible. Just keep drinking!

Peanut Butter Cookie Dough Dip


After I came up with, and immediately fell in love with, the brownie batter dip, I started dreaming up other dip ideas. I love peanut butter cookies. And I love peanut butter with apples. And I totally loved dipping my apples in this super healthy and nutrient dense Peanut Butter Cookie Dough Dip!

Peanut Butter Cookie Dough Dip
1 scoop Vanilla Shakeology
1/4 cup almond milk (or water or other milk of choice)
4 tsps PB, chunky or smooth (the real stuff made from just peanuts - I made it with smooth but I think I would like it even better with chunky) * 4 tsps = 1 Tbs plus 1 tsp
Add some cinnamon if you want :)

Mix it all together, then start dipping. I loved it with apples but bananas would be good to, or anything really. And remember, no guilt, because you're eating your healthiest meal of the day!

The Pizzadilla

I saw something like this on Pinterest years ago and never got around to trying it out. And now that I have, I wish I had tried it years ago! Think pizza meets quesadilla, because that's what it is. You can make it however you like, basically you take anything you'd put on a pizza, and put it on a tortilla. You just make it like you would a quesadilla, on a pan on the stove, over medium heat. You can make it however you like! What I did was take a whole wheat tortilla, lay it on my pan, and sprinkle on some mozzarella cheese. I let that melt a bit, then spread a thin layer of tomato sauce on that. I put a layer of spinach on one half and a layer of tomato slice on the other. Once they were warmed through I folded it up, sliced it, and wondered why it had never occurred to me to make such a creation before. We've had them several times since! Yum!

There is a scripture in the Book of Mormon that says something very similar.

Ether 12:27
And if men come unto me I will show unto them their weakness. I give unto men weakness that they may be humble; and my grace is sufficient for all men that humble themselves before me; for if they humble themselves before me, and have faith in me, then will I make weak things become strong unto them.

So really, as both the scripture and the quote tell us, our struggles/weaknesses are just opportunities for us to grow. So we should be grateful for them!

Tip of the Day: Eggs

Do you know how you can tell what color egg a hen will lay? By the color of their ear lobe. If it is white, their eggs will be white. If it is colored, the eggs will be colored.
Did you know that the color of the egg in no way determines the nutritional value of the egg? I guess some people believe that because brown eggs cost more they must be more nutritious. It isn't true. They aren't. They cost more because the highest laying hens are a bread that lay white eggs. So hens that lay brown eggs lay fewer eggs so it costs the farmer more to keep brown egg-laying hens.
The nutritional value of eggs is determined by what the hen eats. So if you want increased nutritional value get eggs that come from free-range chickens. When the chickens are free to roam around they can eat more insects, thus increasing the protein and other nutrients in their eggs. And free-range organic eggs are even better.
Also, if you are lucky enough to be able to get eggs directly from a farmer don't wash them until you are about to use them. Once you wash them they start to go bad. But if you leave them unwashed they will stay fresh for over a month.

Mango Parfait

I LOVE parfaits for a mid-day snack. Or a dessert. Or breakfast. Or whatever really. I am a huge fan of fruit and if I could get all my needed nutrients by just eating fruit I would totally do it! But I can't, dang it. Oh well, this delicious treat is so enjoyable I am happy to eat my fruit combined with other deliciousness. And, when possible, it is good to eat your fruit in accompaniment with protein. So this is perfect.

Almond Joy Shake-o

I LOVE Almond Joys! I love Mounds too! I love that sweet coconutty goodnes wrapped in chocolate. I like them with the crunchy almond in there, and without. I just love them. Tip of the Day: Eat Protein for Breakfast

Teaching Children

My sister has a t-shirt that says "Motherhood is not for wimps!" I so agree, parenting is hard. And it can be really hard to teach our children to do things for themselves. There are some any times I think about how much more quickly I could get a particular task accomplished if I just did it myself, and then it would get done the way I wanted it done as well. But, I have found that as I teach Abby how to do things it not only gives her more confidence and independence, in the long run it makes things easier for me because that's one more thing she can help out with and one less thing I have to do myself. It's a great deal!

Roasted Green Beans

By far, my favorite way to cook vegetables is to roast them. I love them slightly crisp, and the sweetness that comes form them caramelizing a bit. I haven't found a veggie yet that I don't like roasted. Admittedly, I haven't tried them all, like I've never roasted lettuce. But all the ones I've tried roasting I have enjoyed. And green beans are definitely not an exception. Crispy roasted green beans are a-ma-zing! And they make a great side to pretty much any dinner.


Roasted Green Beans

  • Green Beans
  • Extra Virgin Olive Oil
  • Garlic Salt


Preheat oven to 400 degrees. Rinse green beans and trim ends. I like to break them all in half so they fit in my mouth without having to cut them later, but it's not necessary. Throw them all in a produce bag, or a ziplock bag. Pour in some olive oil. This is one of those annoying recipes without exact measurements, because I never measure since I have different amounts of green beans each time. Basically you want enough EVOO to coat the beans but not drown them. I'd say I usually pour in about 1 tbs EVOO per pound of beans. Then sprinkle on garlic salt to taste. Spin the top of the bag (or zip it), then bounce the beans around until they are evenly coated with EVOO and garlic salt. Lay them out in a single layer on a foil lined cookie sheet (it just makes clean up easier, but isn't necessary). Put them in heated oven until they start to get crispy, about 30 minutes. That's it, easy peasy and so delicious!
